Grilled green asparagus is a classic dish. This twist elevates a classic into something even more special.
Trim away the woody base (1-2 cm) of the asparagus. Brush them with olive oil.
Grill the asparagus on the barbecue or in a grill pan for approx. 8 minutes they are just tender.
Meanwhile, toast the pine nuts in a dry frying pan until golden.
Slice the cayenne pepper in half, remove the seeds and finely slice the flesh. Finely chop the parsley.
Arrange the asparagus on a large plate. Sprinkle with lime juice. Scatter the Parmesan cheese, pine nuts, parsley and cayenne pepper over the asparagus.
