Preparation method

  1. Thinly slice the cod and layer them in a flat dish allowing them to slightly overlap. Halve the passion fruit and place the pulp in a bowl. Squeeze the limes and add the juice to the passion fruit pulp. Add the honey and mustard. Keep 4 tablespoons of the dressing aside and pour the rest over the cod. Cover and leave to marinate in the refrigerator for at least 1 hour. The acid of the lime will gently cook the cod.
  2. Quarter the tomatoes and remove the seeds. Cut the flesh into cubes and chop the chives.
  3. Divide the cod among 4 plates, pour the rest of the dressing on top. Then add the tomatoes, chives and salt and pepper to taste. Garnish with the flowers and cress if desired.
