    This salad with figs is fresh and richly flavoured. And ready in a flash. The subtle sweetness of figs is a fabulous combination with salty parma ham and creamy mozzarella. Ideal as a light lunch or a side dish.

    Preparation method

    1. Slice the figs into wedges and roughly chop the walnuts. Toast the walnuts briefly in a dry frying pan for extra flavour.

    2. Slice the mozzarella balls in half. Arrange the mixed salad leaves in a large bowl or on a platter. Arrange the figs, mozzarella and slices of Parma ham over the salad.

    3. Scatter the walnuts over the top.

    4. Mix the olive oil, balsamic vinegar and honey into a dressing. Drizzle over the salad.

    5. Season with pepper and some salt.
