Preparation method

  1. Beat the whipped cream with the sugar.
  2. Melt the chocolate au bain-marie and beat the mascarpone in the meantime. Add the melted chocolate to the mascarpone and stir until smooth.
  3. Gently fold in the whipped cream to retain the air in the mousse. Allow the mixture to set for a few hours.
  4. Spoon out the passion fruit and fill the glasses.
  5. Start with a layer of white chocolate mousse, then add some passion fruit. Repeat twice. Decorate the glasses with half a passion fruit.

Tip: add a layer of crushed biscuits to the base of the glasses.
